If you're looking for a specialty coffee (e.g., Espresso, Cappuccino, Americano, Café Latté, Café Mocha, etc.) on the Nieuw Amsterdam, you'll find it at the Crow's Nest Café<.em> (formerly known as the Explorations Café).
The Crow's Nest Café can be found right in the middle of the Crow's Nest (forward Deck 11 - Observation Deck). It's open all day, but only serves coffee beverages until about 6:00 PM; after that it's strictly a bar.
And you can also get a range of (free) tasty pastries to accompany your specialty coffee.
And to accompany your pastry and coffee, you get the best views in the ship in comfortable chairs (both also complimentary).
The only downside is how far UP you have to schlep to get them. But hey, it's a lot closer than the nearest Starbucks!
